The Two Minute Chocolate Chip Cookie

Bad day? Your friend had a fight with their spouse?  For any moment where a warm, fresh chocolate chip cookie is called upon, you now have a recipe to create one in under two minutes!  The best part, it's made with all the goodness of regular chocolate chip cookies, like butter, sugar, flour and of course chocolate chips.  The key is using the microwave to "bake" the cookies.  After melting the butter for 30 seconds and mixing with the other ingredients, scoop the mixture as one single cookie on a microwave-safe plate and let it cook for 90 seconds for a slice of heaven just in time. We suggest you take a note of this recipe for those situations that call for a freshly baked cookie STAT!


  • 1 rounded tablespoon butter (vegan if desired)
  • 2 tablespoons soft brown sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon pecan nuts, lightly chopped or crumbled by hand
  • 4 tablespoons plain (all-purpose) flour
  • 1 tablespoon dark chocolate chips


  • In a microwave-safe bowl, spoon in the butter and melt in an 850W microwave for 30 seconds.
  • Stir in the brown sugar, vanilla extract, pecan nuts, and plain flour into the melted vegan butter to form a dough, then stir through the chocolate chips.
  • Spoon the mixture as a single cookie onto a microwave-safe plate, then microwave for 1 minute 30 seconds until cooked.
