The Trick In Making Cauliflower Rice

Riced cauliflower is a big hit!  The so-called faux rice continues to gain fans as it’s able to mimic the tastes of other foods that aren't as healthy.  But all this popularity has cauliflower rice being rationed at some Trade Joe's stores across the country.  But all is not lost, it's super easy to create your own riced cauliflower.  First, remove the stem and leaves from your cauliflower and cut it into smaller pieces.  You can use a cheese grater (bigger holes), which is the preferred method or use a food processor and "pulse" with the chopper or grater blade. With both techniques you’re aiming for little pieces the size of rice.  But before you go to town cooking with it, sandwich the newly created riced cauliflower with a few sheets of paper towels and give it a gentle squeeze to remove any remaining water which can make your dish soggy.
