Eggplant Bacon That Tastes Like The Real Thing

Can a vegetable taste as good as crispy, freshly fried bacon? Many vegetarians and vegans say they've been searching for an item so that they can wholeheartedly say yes and it apparently lies in fried eggplant and the proper use of spices. Food website The Kitchn has come up with a recipe for eggplant bacon that they claim is 'just like the real stuff" and it does involve frying.  Here's the recipe: First, remove the skin of the eggplant.  Then use a vegetable peeler to create long, thin slices for the 'bacon'. Combine some soy sauce, paprika, and liquid smoke in a bowl, then brush the mixture on one side of the eggplant. Heat up some olive oil in a frying pan.  First fry the side without the sauce for around two minutes. Then flip and fry the other side, before drying on some paper towel.




  • One lebanese eggplant
  • Soy sauce
  • Liquid smoke
  • Paprika
  • Olive oil


  • Remove the skin of the eggplant, and then use a vegetable peeler to create long, thin strips for the 'bacon'.
  • Combine the paprika, soy sauce and liquid smoke in a bowl. Brush onto one side of the eggplant. 
  • Heat the olive oil in a fry pan. Fry the eggplant with the sauce side up first, and then flip and fry the other side. Drain on paper towel.
