Nothing can ruin lunch faster than finding your head of lettuce soggy.  Or pulling out a droopy bundle of asparagus from the fridge. Vegetables get soggy because when too much moisture evaporates from its semi-solid cells. But you can avoid bendy carrots and limp celery with a simple trick.  You need to rehydrate them with water.  Yep, put those wilty veggies in a glass or bowl of water for a few hours and kiss those soggy blues away.  Much like how a houseplant perks up after you water it's wilted pot, vegetables can absorb water to restore their firmness. Also storing your vegetables in the vegetable crisper drawer will help keep them firmer a bit longer too.
